Produced by Westfield Farm in central Massachusetts, Smoked Capri is a plump log of goat's cheese smoked over hickory for about 14 hours. This lends the lactic, milky paste a distinctive sharp, hickory flavour that makes it a truly unique goat cheese. Technically, it is a low-fat cheese due to the high moisture content though no specific process takes place and the pâté preserves its smooth and creamy consistency. It could be used as a substitute for cream cheese, baked into a casserole or melted into a cream sauce.
