Our Washed Bufarolo comes to us from buffalo milk innovators Quattro Portoni in Bergamo, Italy. We then wash it in beer from Transmitter Brewing and age it to produce a mushroomy, meaty taleggio-style that is welcoming and approachable. Incredibly versatile in its applications and pairings- Bufarolo does just as well with chocolate as it does with Negronis. It’s also a CFC staff favorite
