This artisan cheese is usually produced in the shape of a square and wrapped in three layers of wax paper. It is made from sheep's milk and has a salty, spicy, flavourful taste. The period of ripening is a minimum of three months and contains 50% of fats. Corsicans eat it with bread and a glass of white wine or spirits.
