Smokey Oregon Blue is the world's first smoked blue cheese. Made from unpasteurised cow's milk, it is gently cold-smoked over hazelnut shells for 16 hours. The smoking process results in sweet cream flavours and caramel notes balanced by earthy flavours of smoke and hints of roasted nuts. The texture of the cheese is cake, reminiscent of candied bacon. The cheese is made from rBST free milk, is vegetarian-friendly and gluten-free. Pair the cheese with ale to counterbalance its signature sharpness.

This hardy cheese from France couldn't be more different from its neighbor Camembert more. Looking like a cratered, dusty cannonball, Mimolette is infamously difficult to open for its super-hard, craggy countenance. Inspired by Dutch Edam, it has since gone in a unique direction; the appearance and floral aroma of the rind is the work of tiny mites, specially evolved to cheese. The French call them tiny affineurs for their important role in the aging process. Its electric-orange paste has sweet, caramelized depth and smooth, fudgy finish, maybe a little Calvados will help you forget about the bugs.

Saint Albray is a flower-shaped cheese that comes from the Aquitaine region of France. Made with pasteurised cow's milk and ripened for 2 weeks, it slices off skilfully with each half-pound cut looking like a "petal". When each petal comes together around a disk, they form a hollow centre similar to a flower.Invented in 1976, the cheese is alike to Camembert cheese and shares the same characteristics but is not as strong as Camembert. When young, the soft ripened cheese is moist, rich and mellow, intensifying with age. At its peak, Saint Albray advances to a more robust, hearty flavour very typical of washed rind cheeses. It has a very rich aroma and taste which can be further enjoyed by eating the cheese along with its rind. The cheese goes well with fruits, nuts and breads. Serve it with a Pinot Noir or Chianti.
