Produced by Landaff Creamery in New Hampshire, Landaff is a mild, semi-hard cheese made from raw cow's milk. A natural grey rind coats a paste that is the colour of butter and tastes moist & mild, tangy with a clean finish and fragrance to match.
Designed after traditional Welsh Caerphilly, this open, buttery textured cheese melts beautifully and is an excellent addition to any cheese plate.

Pierce Pt is a seasonal cheese made in summer season using organic Jersey milk from John Taverna's Chileno Valley Dairy, produced by Cowgirl Creamery, based in Marin County, California, United States. During four weeks of aging the cheese develops bloomy rind dusted with a mixture of field flowers, chamomlie, calendula and Thai Basil. The resultant product is a soft textured cheese with tangy brightness and hints of herbs and flowers.

Kunik is a triple cream cheese manufactured by Nettle Meadow Farm in the Southern Adirondack Park in Thurman, New York. Its name means "snowball" in Eskimo. The white, mold ripened cheese is made from 75% goat's milk and 25% Jersey cow's cream. Its unique recipe makes it more creamy and delicious than typical Brie yet subtle and sumptuous to taste than other ripened goat cheeses.
The animals on the Nettle Meadow Farm are fed only certified organic grains, hay and a wide variety of wild and domesticated herbs empowering Kunik cheese with a tangy, creamy flavour and a thick, smooth, creamy texture. It can be served with Champagne.

Produced by Jasper Hill Farm in Vermont, Winnimere is developed in the style of classics like Vacherin Mont d'Or or Försterkäse. This artisanal, award-winning cheese is made only in the winters when the Ayrshire cows are giving rich, hay-fed raw milk.

The cheese is handmade and washed with locally brewed beer to develop its blushing pink washed rind appearance. Young cheeses are wrapped in strips of spruce cambium to instil the deep and moderate woodsy flavour. At 60 days of ageing, a spoonful of the soft, squidgy cheese tastes of bacon, sweet cream, and spruce with pungent, smoky aroma.

Moses Sleeper is a Brie-style cheese exclusively produced by Jasper Hill Farm, a creamery who not only makes cheeses but also offers cheese maturing caves for other Vermont based producers. It is named after Moses Sleeper, a Revolutionary War scout who was killed while defending Northeast Kingdom's Bayley Hazen Military Road. It has a classic bloomy rind with pink patches beneath which lies a gooey, milky core dotted with occasional eyes or holes. Flavours range from cauliflower, crème fraîche, and toasted nuts to hay and butter. A hint of white mushroom aroma and bright, clean finish brings together the flavour profile of the cheese. Moses Sleeper's mild, savoury flavours taste delicious with pickled carrots and a crusty baguette.

Tomme is a prefix attached to the cheese produced in the Savoy Mountain region of France. This cheese is produced in the Basque region. Tomme Brulee is made from unpasteurised sheep's milk. The rind is singed with a flame so that it acquires a distinct appearance and a strong, sweet and smoky flavour. It has a firm texture with a pungent aroma. This cheese is best complemented by a Malbec or a Cabernet Sauvignon.

Moonside Creamery is a family affair that prides itself on sustainability. Cheesemaker and owner Jennifer Kirkham sources organic milk from two local dairies. Her daughters assist with tasks ranging from cleaning to affinage, and her husband runs the family's farm, growing vegetables and raising pigs using the whey left over from the cheesemaking process.

Midnight Eclipse is a delicate cow’s milk disc that is dusted with black ash before growing a wrinkly rind. It is creamy in texture, offering mild citrus flavors when young and a more robust spiciness as it ages.
