Briana is a semi-firm, smear-ripened cheese, dense and easily melted.  It is carefully aged for a minimum of 90 days to develop a wonderfully complex flavor. It is dense, smooth and slightly elastic, adapted from the Italian Alpine cheeses. It is younger and therefore milder and maintains a semi-hard texture. It is a good melting cheese with distinct nutty overtones, mild herbaceousness and hints of fresh fruit add an element of pungency to the finish. Compliments a fruit and nut tray but can stand up to traditional roasted meats. Good Food Awards Finalist 2014.

P'tit Basque is a 100% pure sheep's milk cheese produced in France's Basque region in the Pyrenees Mountains, the region that spans the border between France and Spain. Traditionally, it was handmade by shepherds from left over curds set aside from milking their ewes. And even today P'tit Basque is made using the same methods applied by the local shepherds.The semi-hard cheese is aged for a minimum of 70 days, during which it develops a basket-weave pattern similar to Spain's famous Manchego cheese but with milder and delicate favour. It has a distinctive aroma of sheep's milk, and a smooth, sweet flavour with a nutty finish.P'tit Basque can be enjoyed as a snack with fruits, with grilled vegetables, fruits, berries and cured meats, and even in salads.

Humboldt Fog is a goat’s milk cheese delivered by Cypress Grove Chevre, of Arcata, California, in Humboldt County. It is a mould-ripened cheese with a distinguishing layer of edible ash. The cheese ripens from the outside to the centre, resulting in a fresh goat cheese center surrounded by a pungent runny shell. This runny shell will widen as the cheese matures and is considered the best part of the cheese, by many. The bloomy mold and ash rind is edible, but is fairly tasteless. The cheese is creamy, light, powdery, slightly lemony and mildly goaty.
Humboldt Fog is available from a mini 1 lbs. cheese wheel (Humboldt Fog® Mini) up to the large 5 lbs. cheese wheel (Humboldt Fog® Grande).
 
The cheese has won the first place at the American Cheese Society in 1998, 2002 and 2005 and Gold at the 2014 World Cheese Awards.
