Midnight Moon is a matured, gouda-style cheese produced in the Netherlands and sold under the Cypress Grove label. Made from pasteurized goat's milk, the cheese is aged for six or more months to produce a dense and smooth ivory-coloured paste that develops a slightly granular mouth feel as it matures off to the 12 month stage. Flavours are of lovely brown butter with intense caramel undertones.Serve the cheese with Belgian Dark, Stout or Trippel or wines such as Syrah, Zinfandel or Sweet Sherry.The cheese has won Gold award at World Cheese Awards 2014, Best in Class, World Championship Cheese Contest, 2010 and Best New Product in Show, NASFT sofi Awards, 2002.

Sottocenere is a truffle infused Italian cheese from the northern region of Veneto. Its name meaning "under ash", is derived from the layer of ash that covers the cheese as it ages.
It is a very pale yellow to off-white semi-soft cheese that is aged in a coat of nutmeg, coriander, cinnamon, liquorice, cloves, and fennel and studded throughout with slices of rich, black truffle. Made with raw cow's milk, the cheese is aged in an ash rind to retain the aromatics over a long period of time as well as to evoke the delicate flavours of the cinnamon and nutmeg, amongst others.
These exotic cheeses are best appreciated on its own yet if you wish, pair it with a glass of sparkling wine or Italian Barbera.

Lamb Chopper is a matured, gouda-style cheese produced in the Netherlands and sold under the Cypress Grove Chevre label. Made from pasteurized sheep's milk, the cheese is aged for 3-6 months to produce a paste that is deep buttery in colour with a smooth firm texture.

Flavours are sweet and buttery at initial stage of ripening but develop an incredible sweetness of caramels and nutty undertones as it fully matures.

Accompany the cheese with Brown Ale, Porter or wines such as Unoaked Chardonnay, Sauvignon Blanc or Vouvray.

L’Amuse Signature Gouda is a hard, Dutch cheese made in Beemster, Netherlands using Holstein Friesian cow's milk. The cheese is matured in warm temperature for more than two years. The paste of matured cheese is deep yellow-amber in colour, with long-lasting creamy, salty, buttery and nutty flavours. Since the cheese is made year-round , the characteristics of the cheese changes with the season.
