Mike Gingrich in the southwestern green hills of Wisconsin produces Pleasant Ridge Reserve. Modelled on the likes of Gruyere and Beaufort, this cheese is made from unpasteurised cow's milk. Similar to all other Alpine cheeses, Uplands make this cheese only from May through October when the cows graze on fresh pasture. Pleasant Ridge Reserve offers a creamy, nutty, and deeply flavoured milky finish that comes from the use of grass-fed milk. The texture is semi-firm and its dense taste becomes more delightful with dry Champagnes and fine Chardonnays. As the cheese ages, the handcrafted cheese becomes more complex and concentrated. A small batch of the cheese is aged for over a year and sold as "Extra Aged" only in the fall and early winter. Pleasant Ridge Reserve is America's most-awarded cheese having won major, national cheese competitions.

Named after the county Grayson, the cheese is produced by Meadow Creek Dairy in the small town of Galax, Virginia. Grayson is an artisanal cheese made using raw milk from their own herd of Jersey cows. It is aged for at least sixty days until the wheels form a reddish-orange rind and golden paste.The texture is fudgy and supple while the paste is rich and beefy with hints of grass and nuts. Grayson goes well with bread or dried fruits. As it melts beautifully, it could be used with a variety of dishes. The cheese pairs well with a full bodied white, medium red, beer.

Produced by Meadow Creek Dairy in the small town of Galax, Virginia, Appalachian is an artisanal cheese made using raw milk from their own herd of Jersey cows. It is a lightly cooked, pressed-curd cheese, aged for at least sixty days until the wheels form a white coat of penicillium moulds to complement its unique flavour. The texture is velvety and melt-on-the-tongue while the taste is reminiscent of lemons with buttery overtones and a mushroomy earthiness.Appalachian goes excellent on a cheese plate or with bread. As it melts beautifully, it could be used with a variety of dishes. The cheese pairs well with a crisp white wine or smooth lager.

Pico is a petite goat’s milk soft cheese, likened to a Camembert, but with a smooth gamey flavor. It is a delicate cheese with rich buttery creaminess and tender rind. A favorite cheese going around at the moment, particular when perfectly ripened and creamy throughout.

Delice de Bourgogne is a French classic triple crème cheese made by Fromagerie Lincet on the lines of other classics such as Brillat Savarin or Explorateur. It originated in the Burgundy region of France where the company factory is located.The cheese is made by blending full fat cow's milk with crème fraîche to create an incredibly delicious soft cheese with a rich flavour and a smooth, melt-in-the-mouth texture. Unlike many simple triple crème cheeses, Delice de Bourgogne has a white, bloomy and pungent rind because of the Penicilium Candidum mold. The mushroomy aroma of thin rind adds a playful contrast to the rich, creamy, buttery and tangy notes of the interior. This high fat cheese pairs very well with Champagne or Ciders and Wheat Beers.
