Ossau-Iraty is a traditional, unpasteurised from the picturesque mountains of Pyrenees that hold a fertile grazing land for the milk-giving ewes. This cheese unites two regions of France in the Western Pyrénées: Ossau in the valley of the Bearn and Iraty in the beech forests of the Pays Basque. It received an AOC protection in 1980, which requires that the cheese be produced with the milk of only two breeds of ewes - Manech and Basco-Béarnaise.
An uncooked and pressed cheese, Ossau-Iraty is semi-hard in texture with a thick, buff rind marked with rust and gray molds. Beneath the brown and orange rind is an ivory white, supple and slightly grainy interior that has a creamy and buttery mouth feel. Flavours are herbaceous, nutty and fruity if the produce is from winter while the summer cheeses tend to reveal aromas of grass and flowers.
Matured for at least 6 months, Ossau-Iraty often comes in a flat cylindrical shape. There are three main sizes available, small (Petit-Ossau-Iraty-Brebis Pyrenes), intermediate (non-fermier) and large (fermier). It is sometimes dusted with paprika leaves to add a kick of flavour. It tastes delicious with fruity red, full-bodied red or white wines such as Zinfandel, Tempranillo or Syrah.

Pont-l'Évêque is a French cheese. It is believed that its name is derived from 'Norman abbey' in Normandy, France where it was mainly produced during the 12th century. The cheese is also known as Moyaux cheese.

Probably one of the oldest cheeses of that area, Pont-l'Évêque was called as d'Angelot during ancient days. Made from cow's milk, this cheese is manufactured throughout the year. Small, square shaped Pont-l'Évêque is of pale yellow colour while its rind has white-orange colour.

A soft and very rich cheese with creamy and full-bodied flavour, tastes best when eaten at room temperature. It is an excellent dessert cheese, which goes well with a robust wine.

Mike Gingrich in the southwestern green hills of Wisconsin produces Pleasant Ridge Reserve. Modelled on the likes of Gruyere and Beaufort, this cheese is made from unpasteurised cow's milk. Similar to all other Alpine cheeses, Uplands make this cheese only from May through October when the cows graze on fresh pasture. Pleasant Ridge Reserve offers a creamy, nutty, and deeply flavoured milky finish that comes from the use of grass-fed milk. The texture is semi-firm and its dense taste becomes more delightful with dry Champagnes and fine Chardonnays. As the cheese ages, the handcrafted cheese becomes more complex and concentrated. A small batch of the cheese is aged for over a year and sold as "Extra Aged" only in the fall and early winter. Pleasant Ridge Reserve is America's most-awarded cheese having won major, national cheese competitions.

There are two types of Appenzeller cheese: common (made with skim milk and brine-cured for 12 months and festive (full milk cured with brine as well as pepper and the sediment from the white wine-making process). The cheese originates in the north-eastern Swiss canton of the Appenzell near the Liechtenstein border but, today is also made in the canton of St Gallen (which is a siege of a special authority protecting a genuity of Appenzell).
Appenzeller is sold in three varieties
- "Classic". Aged 3-4 months (Silver label)- "Surchoix". Aged 4-6 months(Gold label)- "Extra". Aged 6+ months (Black label)

Cremont meaning "cream of Vermont" is a signature cheese produced by Vermont Creamery, Websterville, Vermont, US.  The cheese is a combination of pasteurized cow and goat milk and crème fraîche. The cheese is aged for two weeks, during maturation a special mixture of yeast and mold is added that gives a unique flavour to Cremont. This hand shaped cheese has cream coloured rind and smooth interior.  It goes well with crusty bread and jam.

Chiriboga Blue is a Bavarian (German) artisanal cheese produced by an Ecuadorian cheesemaker, Arturo Chiriboga. His cow's milk blue was modelled on Roquefort but tastes more creamy and buttery than the peppery, assertive French classic. The smooth, spreadable texture is dense, evocative of frozen custard. The ivory interior with very few blue-gray streaks of veining produces a very subtle flavour of sweet cream and grass perfect for cheese mongers who have just started with their journey of blue cheeses.
