Green Hill is a pasteurized cow’s milk, soft-ripened cheese produced by Sweet Grass Dairy in Georgia, United States. It is individually handmade and ripened for two weeks for the cheese to develop a buttery flavour, silky texture and thin bloomy rind.To eat the cheese, let it warm up to room temperature. This will soften the gooey paste and allow the cheese's natural flavours to shine through. Then drizzle some honey over it and serve with some fruits, nuts or crunch French bread. Pair it with a Champagne or sparkling wine. Beer lovers could go for Belgian Trippel ale as well. Green Hill is an eight-time winner at the American Cheese Society Annual Conference.

Point Reyes Toma is a gluten-free semi-hard, dutch style, farmer's cheese made from pasteurized cow's milk, produced by Point Reyes Farmstead Cheese Company, California, US. This cheese made with microbial rennet has a buttery, creamy flavour with a grassy tang finish. Toma is wonderful on a cheese board or with omelets, burgers, sauces. Try pairing it with Hop-heavy beers, Pinot noir, Scotch. 
The cheese has won many awards including silver medal at 2010 World Cheese Awards in London, gold medal at 2011 California State Fair, 1st place ribbon at 2011 American Cheese Society in Montreal.

Midnight Moon is a matured, gouda-style cheese produced in the Netherlands and sold under the Cypress Grove label. Made from pasteurized goat's milk, the cheese is aged for six or more months to produce a dense and smooth ivory-coloured paste that develops a slightly granular mouth feel as it matures off to the 12 month stage. Flavours are of lovely brown butter with intense caramel undertones.Serve the cheese with Belgian Dark, Stout or Trippel or wines such as Syrah, Zinfandel or Sweet Sherry.The cheese has won Gold award at World Cheese Awards 2014, Best in Class, World Championship Cheese Contest, 2010 and Best New Product in Show, NASFT sofi Awards, 2002.

Moses Sleeper is a Brie-style cheese exclusively produced by Jasper Hill Farm, a creamery who not only makes cheeses but also offers cheese maturing caves for other Vermont based producers. It is named after Moses Sleeper, a Revolutionary War scout who was killed while defending Northeast Kingdom's Bayley Hazen Military Road. It has a classic bloomy rind with pink patches beneath which lies a gooey, milky core dotted with occasional eyes or holes. Flavours range from cauliflower, crème fraîche, and toasted nuts to hay and butter. A hint of white mushroom aroma and bright, clean finish brings together the flavour profile of the cheese. Moses Sleeper's mild, savoury flavours taste delicious with pickled carrots and a crusty baguette.
