Iberico cheese is produced only in the province of Valladolid in central Spain. In order to maintain some semblance of order and control of its large cheese production the Spanish government created the Denominations of Origin Certification. This designation controls the name, area, and standards of production to insure a consistent quality product. Iberico is not yet DOC certified but it has applied for certification and hopes to receive it soon. However the dairies that produce this cheese have maintained their own high standards and guidelines since 1987.

Bartlett is an unpasteurized sheep's milk cheese made by brothers James & Dave Bartlett at their farm in Somerset. It is a soft, mould-ripened cheese with a wrinkled, creamy- coloured, and aromatic coat of Geotrichum candidum.  Aged for about 3-4 weeks, the cheese ripens outside-in as the moulds and yeasts digest the fats and proteins within. It has a smooth and dense paste with a complex flavour augmented by the dense richness of the sheep's milk. Flavours are a subtle balance between buttery lactic notes and savoury dried-tobacco-leaf aromas.

Caveman Blue is a natural rind blue cheese made using rBST free raw cow's milk. It is cave aged for at least 6 months, resulting in a mould-riddled exterior beneath which lies a thick, dense paste with a crystalline, buttery texture. The lengthy maturation gives the cheese taste of sweet, fresh buttermilk with undertones of beef and bacon, tropical fruit, grass and hay.

La Tur is a soft-ripened cheese made from a blend of sheep's, cow's and goat's milk. It is produced by Caseficio dell'Alta Langa in the Alta Lange region of Italy. The cylinder shaped cheese is a light straw yellow colour with an edible soft and wrinkled rind. La Tur tastes of the sweetness of cream and butter, followed by acidic notes and yeasty flavours.
It goes with a wide variety of wine pairings, especially those with floral or honey notes.

Époisses de Bourgogne is a soft cow’s milk cheese produced by Jacques Hennart in the village Époisses, France.

Commonly called as Époisses, the cheese has creamy, chewy and firm texture. With a distinctive soft red-orange colour, it is categoried as a smear-ripened cheese washed in marc de Bourgogne. It takes at least 6 weeks to mature fully.

Despite its pungent smell, the cheese has a spicy, sweet and salty flavour. It goes well with Trappist beer and Sauternes.

Cambozola is a triple cream, brie-style blue cheese made from pasteurised cow’s milk in the German region of Allgäu. The cheese invented in 1900s, is still made in Germany by Kaserei Champignon since 1970s.

In English speaking countries, it is often symbolized as blue brie.
The cheese is injected with same blue Penicillium roqueforti mold used to make Gorgonzola, Roquefort, and Stilton. However, it is neither pungent like Stilton, nor crumbly like Roquefort.

The cheese, a cross between Camembert and Gorgonzola, is creamy, moist and rich like a Camembert with the sharpness of Gorgonzola. A soft-ripened cheese, the insides reveal pockets of blue veining and a unique exterior of grey mold.

Its savory, nutty flavour with undertones of sweetness enhance the wonderful characteristics of the cheese. For a food connoisseur, the Cambozola is a great start into the world of Blue Cheeses. Taste it with fruits, honey or a Chardonnay.

Murcian cheesemakers invented this cheese in 1986 in an attempt to create a distinct regional cheese with big commercial potential. The cheesemakers took a traditional local goat cheese and bathed it in the local Doble Pasta red wine for 3 days. The result has been an unqualified success both commercially and gastronomically and has brought attention and capital to the region. Aged for roughly 75 days, this semisoft cheese has a sweet, smooth flavor.

The first Queso de Murcia al Vino DOP imported to the US, Drunken Goat® is made with the finest milk from the region. Midnight Moon is a matured, gouda-style cheese produced in the Netherlands and sold under the Cypress Grove label. Made from pasteurized goat's milk, the cheese is aged for six or more months to produce a dense and smooth ivory-coloured paste that develops a slightly granular mouth feel as it matures off to the 12 month stage. Flavours are of lovely brown butter with intense caramel undertones.Serve the cheese with Belgian Dark, Stout or Trippel or wines such as Syrah, Zinfandel or Sweet Sherry.The cheese has won Gold award at World Cheese Awards 2014, Best in Class, World Championship Cheese Contest, 2010 and Best New Product in Show, NASFT sofi Awards, 2002.

Cypress Grove Chevre

Humboldt Fog is a goat’s milk cheese delivered by Cypress Grove Chevre, of Arcata, California, in Humboldt County. It is a mould-ripened cheese with a distinguishing layer of edible ash. The cheese ripens from the outside to the centre, resulting in a fresh goat cheese center surrounded by a pungent runny shell. This runny shell will widen as the cheese matures and is considered the best part of the cheese, by many. The bloomy mold and ash rind is edible, but is fairly tasteless. The cheese is creamy, light, powdery, slightly lemony and mildly goaty.
Humboldt Fog is available from a mini 1 lbs. cheese wheel (Humboldt Fog® Mini) up to the large 5 lbs. cheese wheel (Humboldt Fog® Grande).
 
The cheese has won the first place at the American Cheese Society in 1998, 2002 and 2005 and Gold at the 2014 World Cheese Awards.

Delice de Bourgogne is a French classic triple crème cheese made by Fromagerie Lincet on the lines of other classics such as Brillat Savarin or Explorateur. It originated in the Burgundy region of France where the company factory is located.The cheese is made by blending full fat cow's milk with crème fraîche to create an incredibly delicious soft cheese with a rich flavour and a smooth, melt-in-the-mouth texture. Unlike many simple triple crème cheeses, Delice de Bourgogne has a white, bloomy and pungent rind because of the Penicilium Candidum mold. The mushroomy aroma of thin rind adds a playful contrast to the rich, creamy, buttery and tangy notes of the interior. This high fat cheese pairs very well with Champagne or Ciders and Wheat Beers.
