Époisses de Bourgogne is a soft cow’s milk cheese produced by Jacques Hennart in the village Époisses, France.

Commonly called as Époisses, the cheese has creamy, chewy and firm texture. With a distinctive soft red-orange colour, it is categoried as a smear-ripened cheese washed in marc de Bourgogne. It takes at least 6 weeks to mature fully.

Despite its pungent smell, the cheese has a spicy, sweet and salty flavour. It goes well with Trappist beer and Sauternes.

Kaltbach Le Gruyère is an epic AOP Swiss cheese attentively made from silo-free raw cow’s milk in the Gruyère region of Switzerland. The fruity-tangy Gruyère is matured for a year, 3 months in the cheese dairy, and then transferred to the sandstone caves of Kaltbach for more than 300 days to develop the hallmark brown rind. This is a robust and deeply full flavoured cheese with evenly-balanced undertones of fruit and nuts and lingering after-taste without bitterness. It has a crumbly body with an occasional crystallization. This genuine classic tastes delicious with gougères, apple pie, risotto and shaved atop salads. Try pairing the cheese with wines such as Cabernet Franc, Late harvest Riesling, bock, stout, Belgian lambic, single malt scotch for a great combination.

Old Winchester, popularly known as Old Smales is a matured version of Winchester. It is a much dryer and harder cheese with a characteristic nutty flavour. Since Old Winchester is made with vegetarian rennet, the cheese is used as a common replacement for hard Italian table cheeses. The wheels are sold at 18 months age when it is full flavoured with an underlying sweetness, and a crunchy finish.
Old Winchester has won many awards, including Best Modern British Cheese in 2006, Reserve Champion Cheese at the Bath and West in 2007. Each year, it has been consistently winning a one, two or a three star at the Great Tate Awards.

Brie de Meaux, named after the town of Meaux, is a French cheese produced in the region of Brie, located 50 kilometers to the east of Paris. Evidence in the chronicles of Charlemagne suggests the tasting of Brie by the Emperor in the year 774. It is also said, Louis XVI last wish was a tasting of Brie cheese. In 1814, the European Tournament at Congress of Vienna, awarded Brie de Meaux the "Le Roi des Fromages" (The King of Cheeses) for its unarguable flavour and texture.
Brie de Meaux, an AOC cheese should be matured in the regions of Seine-et-Marne, Loiret, Aube, Marne, Haut-Marne, Meuse and Yonne. The difference between production and maturation places is a typical Brie tradition.
This is a raw, soft unpasteurised cow's milk cheese covered with a bloomy rind, a result of inoculation with Penicillium Candidum molds. As the cheese ages, the rind develops red or brown patches. When nearly half of the straw coloured pate is ripe and soft, it indicates Brie de Meaux is ready for consumption.
Brie has a milk and rich taste underlined by sweet and buttery flavours of mushrooms or truffles and almonds. The cheese pairs perfectly with Champagne, a red Bordeaux or Bourgogne (Burgundy).
