Etorki, meaning “origin” in Basque language, is a pasteurised sheep’s milk cheese made in French Basque region of the Pyrénées. The milk used to make this cheese is sourced from local black- or red-faced Manech ewes herded by local shepherds and dairy farmers. It takes six gallons of ewe’s milk to produce one wheel of Etorki.
Cheese making in the Pyrenees region has been following a tradition that has remained unchanged for the last 4000 years. It requires the cheese to be pulp pressed but not cooked and slowly matured for a period of three to six months.
Etorki has a rusty, bumpy rind because of the molds formed during pressing. The smooth, supple and velvety interior is a consistent white with occasional holes or slits. It has a sweet and earthy aroma suggestive of the caramel flavours released by the pressed and aged sheep’s milk.
Pair Etorki with chardonnay, riojas or traditional, sparkling white wines.

There are two types of Appenzeller cheese: common (made with skim milk and brine-cured for 12 months and festive (full milk cured with brine as well as pepper and the sediment from the white wine-making process). The cheese originates in the north-eastern Swiss canton of the Appenzell near the Liechtenstein border but, today is also made in the canton of St Gallen (which is a siege of a special authority protecting a genuity of Appenzell).
Appenzeller is sold in three varieties
- "Classic". Aged 3-4 months (Silver label)- "Surchoix". Aged 4-6 months(Gold label)- "Extra". Aged 6+ months (Black label)

Bleu de Gex is the work of the monks of the Saint-Claude Abbey in Franche-Comté. The cheese is also known as Bleu de Septmoncel. It obtained a registered designation of origin (AOC) in 1977 before gaining a protected designation of origin (AOP) in 1996. It was introduced to the royal court of France in 1530 thanks to Charles V, a legendary cheese lover.

The raw milk used to make this cheese is produced by Montbéliarde and Simmental breeds of cattle raised in the mountainous areas of Ain and Jura (Jura mountain range).

The beige and light brown rind of this cheese is obtained through regular brushing. The name, “Gex”, is engraved on the rind. The ivory-colored paste is lined with a number of grayish blue veins.

Tomme de Montagne is a delicious semi-soft raw cow's milk cheese from the Haute-Savoie region in eastern France. It tastes fruity with more character than the more famous Tomme de Savoie. It’s a great addition to any meat, cold cut platters or green salad.
