Though Urgèlia, with a semi-firm texture & eyelet-dotted interior, belongs to the washed-rind family, it is a relatively tame member. The flavor is slightly nutty, a little salty & pleasantly acidic. This cheese brings wonderful flavor to a cheese board & makes the perfect pairing for antipasto. Also a great melter, try it in a sauce or on a sandwich.
