Troufleur is a farmhouse cheese with character, soft dough and a slightly flowery ochre crust. It is produced from the whole raw milk of Montbéliardes raised in Thirimont (commune of Waimes) in the Belgian Haute-Ardenne region. This cheese loaf owes its name to the peat harvester in the Hautes-Fagnes (in Walloon, "Lu troufleu"). Indeed, its size is related to the measurements of traditional peat blocks. It is matured with Bellevaux beer (a traditional brewery located near Malmedy) for two months.
