Monks in the western region of France produce walnut liqueure and soft cheese. These two things have been combined to create Timanoix. The rind is washed with the liqueure to develop a deep walnut flavor with savory and earthy notes. As you gravitate towards the center you will find a classicly milky and buttery flavor.
