Coming from grass-fed dairy cows, this English Cheddar has a tang, but with a sweet buttercream note that sincerely makes your tastebuds second guess themselves. A fine contrast indeed. You can certainly taste the natural sugars from the milk, and a slight hint of saltiness finishes off each bite. This is not a "smelly" cheese and is pleasant in appearance. Darker in hue than most orange cheddars, the "red" coloration is a noticeable characteristic that sets it apart even before sampling. A medium-bodied, pumpkin spice ale or earthy zinfandel would pair nicely with this cheese. For food pairing suggestions, try salty cured meats, rich figs, or dried fruits.
