At once complex and balanced, savoury and mellow, this farmhouse revival of a classic British cheese is full of flavour without any aggressive acidity. The texture is firm, chewy, and pleasantly moist. Made with raw cow's milk and animal rennet. Clothbound with lard.

Really not good. Subtle flavor, but a bad subtlety and with a not nice funk. Almost musty. Edit: I went back to it a day later and it wasn’t bad. Two days after that and I disliked it again. Small window (for me at least).
