Green Søhøjland is a tasty, medium-layered cut cheese that has matured specifically for us Danish cheese dealers. It has a relatively soft texture, a full and still round taste, slightly stronger than Blue Søhøjland. Under the staniol, there is a thin layer of putty like crust, which contributes to the full and characteristic flavor. Cheese from Søhøjlandet was developed in collaboration with the cheese dealers' association and is produced at Them cooperative dairy which was founded in 1888 by a group of local farmers.
