Saulnois comes from the Lorraine region of North-Eastern France. Its unique flavour is attributed to its affinage, which involves being soaked in Marc de Mirabelle, a local golden plum brandy. Aged by affineur Rodolphe Le Meunier, the cheese develops a flavor that is balanced, rich and condensed. The unique soaking process also influences the cheese's flavour with fruity flavours coming through and slightly nutty undertones.
