Rustinu is a French cheese introduced by famous French cheesemaker, Joseph Guidicelli. This cheese originates from the historical region of Rustinu, where the family business is located. Many other cheeses originate from this region such as U San Pedrone, U Casarone and U Muntanacciu. An artisanal cheese, the period of ripening takes three months and during this time, the cheese cylinders are regularly turned and brushed. It has a fat content of 45%.
