This is a ripe fresh cheese. Rosalita is matured on milk mushrooms, which gives a quite different taste than Brie and Camamber. This type of fresh cheese is not produced by Tine, which makes it unusual and unique here in Norway. Rosalita has many flavors in it, which we think only a cheese of unpasteurized milk can have. Many people know a mild taste of honey, a slight sweet taste. Rosalita melts on the tongue, one takes a bit, without thinking about it.
