This is one of the best British cheeses, worthy of a sonnet. It is a quintessential English cheese, suitable not only for celebrations, but also to perk up everyday dishes. It is the only British cheese to have a Certification Trade Mark and an EU Protected Name.
The Stilton cheese can only be produced in the three counties of Derbyshire, Nottinghamshire and Leicestershire. The cheese is made from locally produced cow's pasteurised milk. It is made in a cylindrical shape and allowed to form its own coat or crust. The distinctive feature of this cheese is magical blue veins radiating from the centre of the cheese.
Traditionally, this cheese has been paired with sherry and port wine. It is also a good choice to go with walnuts, crackers, biscuits and bread.

Long Clawson Dairy Limited

Made of pasteurised cow's milk, it is produced by the Long Clawson, Leicestershire and the Cropwell Bishop and Colston Bassett dairies in Nottinghamshire. For the first time in the 1970s, it was made by Andy Williamson at the Castle Stuart dairy in Inverness. Therefore, it was called Blue Stuart or 'Inverness-shire Blue'.
It is a semi-firm blue cheese described as a cross between Stilton and Cheshire. In a period of 10-12 weeks, it forms an orange-brown, natural rind and smooth texture. With a sharp, strong flavour and a bit tangy aroma, it is a vegetarian's cheese having a fat content of 48%. It can be paired with Port Noir and Riesling.
This celebrated cheese has won many medals including silver at the 2014 World Cheese Awards.

Most of us think of Stilton as an English blue cheese, and while this guy is blue, it's all about dried fruit. This firm, crumbly pasteurized cows milk is mild and hearty, and studded with the concentrated sweetness of dried blueberries. Turn it into dessert with a drizzle of honey.

Huntsman is a concoction of two classic cheeses produced in the English countryside. Double Gloucester is a firm, mellow and tangy cheese made only from the milk of Gloucester cows in southwestern England while Stilton Blue cheese is a blue-veined, strong, smooth and creamy cheese with a distinctive flavour profile. Though the combination seems unusual, the English cheesemakers have made it possible by presenting a layered representation of the two cheeses. Stilton is sandwiched between layers of satiny Double Gloucester, resulting in a powerful flavour combination of the two.
It is a difficult cheese to cook with, but visually stunning on a cheese platter. Each cheese could have its own wine pairing, but together they go well with ales and beers.

Made using a traditional recipe, Rutland Red is buttered, cloth-bound and matured for six months to produce a flaky, open texture cheese with a slightly sweet, caramelised flavour and rich golden orange colour. It is the only pasteurised Red Leicester produced in the county of Leicestershire and is a firm favourite at Long Clawson Dairy. Rutland Red is an award winning cheese winning 3 golds at the Global Cheese Awards and 4 golds and the Tesco Red Leicester Trophy at the International Cheese awards.

Clawson Blue Stilton

Red Windsor is a pinkish white marbled English cheddar laced with Bordeaux wine or a mix of port wine and brandy. The patterned cheese presents the best of both worlds by combining a delightful and delicious mix of flavours. It has the fruitiness of port and brandy and creamy cheesiness of semi-hard cheddar.
