Y Fenni, a Welsh Cheddar cheese made with Welsh brown ale and wholegrain mustard seeds, when coated with bright red wax is known as Red Dragon. It takes its name from the dragon symbol on the Welsh flag. The moist yet firm Red Dragon is aged for 3 months and made from pasteurised cow's milk and vegetable rennet. The mustard seeds not only give it a unique texture but also an amazing buttery and spicy flavour. Along with the subtle sharpness of mustard seeds, the flavour of Red Dragon is also reminiscent of the mild, sharp taste of the Welsh ale and traditional cheddar. Some say, the taste of the cheese is very similar to sharp cheddar. Serve Red Dragon with dark ale or try a strong red wine. It is an excellent table cheese that melts well on a sandwich.

Harlech Truckle or simply Harlech is mature mild Welsh cheddar made using pasteurised cow's milk and vegetarian rennet with chopped horseradish and parsley blended in for that extra "bite". The cheese is then coated in a distinctive bright orange coloured wax. It is named after the famous Welsh Warriors of the Middle Ages.
The texture of Harlech is smooth and creamy with a peppery, fresh and zingy flavour of horseradish and parsley. Produced by The Abergavenny Fine Food Co of Gwent, Harlech is a great accompaniment to any cheeseboard and all dishes that include cheese. Serve this unique cheese with egg omelet, sandwiches or enjoy it with apples and crusty bread. It pairs well with beer, Burgundy, Zinfandel and hearty ale.

St Illtyd is a mature creamy cheddar with white wine, garlic and parsley from Abergavenny in Wales.

There's a whole lot of serious flavour going on here. St Illtyd is strong but soft and mellow with the distinct warmth of garlic and a zing of wine and herbs, all wrapped on black wax. Eat one mouthful and you just have to try another. And another. And then maybe one more.

Pant-Ys-Gawn, also spelt as Pantysgawn or Pant-Ysgawn, is a Welsh goat’s milk cheese first made by Tony Craske on his farm "Pant-Ysgawn" near Abergavenny, Monmouthshire, Wales. Later he expanded his business, renaming the company Abergavenny Fine Foods Ltd.Pant-Ys-Gawn is made from pasteurised goat’s milk sourced from Brecon Beacons National Park. It is a soft, creamy and salty cheese with a hint of sourness which is sometimes associated with the acidity of lemon. Sold in logs of 1 kg or 150 grams, this rindless cheese can be bought rolled either in black peppercorns or in mixed herbs. It is a table cheese suitable for snacks, grilling, spreading or in salads.
