Perl Las, meaning ‘Blue Pearl’ in Welsh, is a superb blue cheese made by Carwyn Adams and family at Caws Cenarth in Carmarthenshire. This deliciously golden and veiny cheese has become one of the most famous and highly regarded cheeses in Wales over recent years. It is delicately salty and creamy with a lingering blue aftertaste.

I found this quite stinky (asparagus, other unmentionable things) for the first few days. A heavy hit of Brettanomyces too (like horse sweat) It tamed after a few days by the time we were down to half a block. The blue was subtle (I’d have liked more) and I didn’t find that it was balanced overall (blue vs cheese) but will certainly give it another go
