Goat's milk cheese of round shape that comes from Lagrassse in the Corbieres region on the Mediterranean coast. The cheese has a rind of natural mould and the pâte is supple. It suggests a slightly acidic flavour with no sweetness. Affinage of this cheese is about one week and a content of fat is 45 per cent.
