Produced by Romaniae Terrae, Pecorino Mallo di Noce is an Italian cheese made with highly selected sheep's milk pasteurized at optimum temperature. The cheese is first matured in ventilated rooms at a constant temperature and then later transferred to a cave on beech planks.The unique maturation process gives the cheese a white crumbly and grainy texture, delicate mouthfeel, sheepy flavour and an aftertaste of walnut.
