This is an Alpine-style cheese. Flavor comes from moving small herds of dairy cows gradually up the alpine mountainsides to assure only the freshest grasses and wildflowers are consumed.

Pungent hard cheese, some crystallization and bitterness to it. Agree it's like a milder gruyere with a lingering "funk" to it.
