Third generation cheesemaker, Bill Novak II, spent the early years of his life learning the art of cheesemaking alongside his father. After studying agricultural business at the University of Wisconsin-Platteville, working in natural cheese cutting and processing at Safeway and working in the procurement department of Great Lakes Cheese, Bill developed a great understanding of cheese production and the processed cheese field. Since forming Novak’s Cheese in 2006, Bill continues to use his knowledge to relate to customers' wants, needs and ongoing issues, as well as to keep up with trends in the industry. Additionally, with the continued growth of the company, Bill’s son, Ben, has joined his father in Novak's operations. Both Bill and Ben are licensed Wisconsin cheese graders and, of course, proud Wisconsinites!
