Montanhês is named after being made on a large scale in the Mantiqueira mountain region in Minas Gerais.   This cheese has a milder flavor than Parmesan. Harmonizes well with soft wines and fruits. Can be used on cold boards or as an appetizer. One tip is to use it as a replacement for Parmesan. Sprinkle over roasted vegetables, stuffed tomatoes and pasta.
