A brie-style, surface ripened goat's milk round. Merry Goat Rounds are wrapped at 2 weeks, when the white bloomy rind is established.  As it ripens from its rind inwards, it softens and becomes creamier with deepening earthy flavors. Merry Goat Round starts with a clean, lactic sharpness and develops stronger complex mushroom-flavor notes with age.

Nothing at all wrong with this cheese, but it's very simple. Maybe I'd give it 4.5 stars. I really like it with apple jelly or quince paste. It's very good as an example of a soft ripened goat cheese, it has no frills, no unique characteristics, but it's tasty. It's definitely a little goaty. When young it's very milky in flavor. I recommend it very ripe, liquidy, a few days past the sell-by date, but before it smells like ammonia. Also keep an eye out for the spruce reserve edition, wrapped in a band of boiled spruce bark.
