This is a very mild, young cheddar with a moderate smoke flavor. There is a slight bitter aftertaste which could be from the smoke or the raw milk nature (but I’m banking on the smoke). The texture is quite soft and buttery, but not rubbery. The aroma is dominated by smoke with a hint of young cheese butteriness.
