Lingot des Causses is a traditional French cheese made in the central Pyrennees, better known for its production of the famous Rocamadour. The raw milk for the cheese come from goat's grazing in a large belt of pasture, which stretches from the Causses hills to the Dordogne river valley. Light velvety in texture with a caramelly rind, Lingot des Causses exudes a fresh, tangy yet slightly salty flavour with an aroma reminiscent of fresh goat’s milk and herbaceous.
