Round-shaped cheese with natural rind made from the mixture of sheep's and goat's milk. The cheese is named after a small river in the north of Corsica. It has a sticky rind, marked by the colander in which it was molded. The cheese has a delicate taste, suggesting herbs and flowers. Affinage takes at least two months, during which time the cheese is turned every two days.
