Found it in Montreal. Woah. The cheese is made specially in Chabichou, France. This cheese is very flavorful but easygoing (can be paired with crackers, bread or eat alone and all taste amazing). The texture is softer side but firm enough to not lose shape after cutting. It doesn’t crumble like most chèvre. It is romantic and dances on your tongue. You can taste the milk almost like fresh yet it gets this grounding to it. One bite, it is like you threw a stone in the lake, the layers of flavors just swimming in bit by bit and different every layer. It is so yummy that I can’t stop eating it.
