Kilchurn Estate Krystal Pure Cave Aged Cheddar is made using pasteurized cow's milk and the same culture that is used in Parmigiano-Reggiano, to produce calcium crystals. After aging in caves in Southern England for 15 months, the end result is an extra sharp flavor and a creamy texture peppered with calcium crystals. The unique qualities of this cheddar are best for showcasing on a cheeseboard with sweet apricot preserves. Pair it with a glass of port or a pale ale.

I was surprised by the amount of calcium crystals in this cheese aged 15 months. It has far greater crystal texture than some cheddars we’ve had aged 36 months. Very pleased with this sharp cheddar; my wife and I ate half a block in one sitting and that was with restraint!
