Chistou is a mix-milk cheese made from 50% cow's milk and 50% sheep's milk. It is produced in France's Basque region in the Pyrenees Mountains, the region that spans the border between France and Spain. This semi-soft natural rinded cheese is aged for a minimum of 90 days in the village of Larceveau.The complex cheese is a blend of the fragrant flavours from cow's milk and characteristic smooth tangy flavour of sheep's milk.
