Chistou is a mix-milk cheese made from 50% cow's milk and 50% sheep's milk. It is produced in France's Basque region in the Pyrenees Mountains, the region that spans the border between France and Spain. This semi-soft natural rinded cheese is aged for a minimum of 90 days in the village of Larceveau.The complex cheese is a blend of the fragrant flavours from cow's milk and characteristic smooth tangy flavour of sheep's milk. It boasts of a pleasing melt-in-your-mouth feel with its full-bodied flavour.Chistou is best appreciated as an appetizer or before dessert. Remember to peel off the rind before eating. It pairs well with medium-to-full-bodied red wines or a spicy Pinor Noir.
