Holey Cow is a hand-made, semi-soft cheese made from Pasteurized cow's milk, produced by the Central Coast Creamery in Paso Robles, California, US. Similar to Swiss cheese, it has small round shape openings throuhout the cheese. It takes about 2 months for maturation. A smooth and creamy textured cheese has buttery and crisp taste.

Delicious. It’s everything a Swiss can be but dare I say adds a malty flavor that coats your palate. I happen to enjoy pilsners and Bavarian style beers, in which case they pair beautifully with Just effervescence to accent other complex notes. You’ll be reminded of many different flavors, i for one was reminded of a German sausage sandwich. Cheers
