Hay Flower Rebel Cheese is a semi-hard, creamy cheese from Käserebellen, processed only from the purest hay-milk of cows that are fed on dried hay, herbs and grains of corn and not on industry concentrates. This "allergy friendly" cheese is 100% GMO-free and without fermented foodstuffs. It's got a great rich flavour of flower meadow from the hay-milk with lingering scents of honey, floral aromas and young wood.  This celebrated cheese has won bronze award at the 2014 World Cheese Awards.

I’m no judge of cheeses, but this one is delicious and complex. Buttery, earthy, herbaceous. I would prefer a more firm texture but that’s just my own personal taste. Also, pretty tasty with this Viognier I’m drinking with it.

Wow! This cheese tastes amazing. The rind is fantastic, the cheese itself tastes very... high quality? It has a sharp, intense flavor. Very slightly too intense for my taste, but nearly perfect.
