Swiss Gruyere Vieux AOC is thick crusty-rinded hard cheese made by Jean Marie Dunand in Le Cret sur Semsales dairy & carefully cave ripened for at least 18 months. Swiss Gruyere Vieux has a smooth, condensed texture with caramel, nutty notes. The heat treatment in the cheesemaking process gives the cheese its characteristic sweetness and during maturation the development of small horizontal fissures. Known as ‘lenures’ and tiny crystals of tyrosine (an amino acid), these add a deliciously sweet-salty crunch to the powerful lingering flavours.
