Graddost, which means “cream cheese” in Swedish, is a delicious, mild, smooth and creamy cheese made with cow’s milk. It is slightly nutty in flavour laced by a fresh tang. The cheese features a smooth, pale yellow, natural rind with small, pea-sized holes scattered throughout the pate of cheese. It is ripened for up to seven months and has a fat content of around 45 per cent. However, a skimmed milk version containing only 30 per cent fat is also available. Since Graddost is easy to melt, it makes an excellent snack cheese that can be served with sandwiches, pizzas, fruit or wine. Chenin Blanc, Sauvignon Blanc and Fruity Merlot complement the mild nuttiness of the cheese.
