Whatcom Blue might be the best-known Washington blue cheese, but Glacier Blue deserves just as much acclaim. It is flavorful yet mild, which is sort of a rarity among blues, which tend to be more one or the other. One of my favorites at today’s Washington Artisan Cheese Festival!
