This is a handcrafted, washed-rind cow's milk cheese that combines traits of Gouda with another Swiss variety called Appenzeller. It is delicately aged for 8 months on cedar planks, adding robust quality to the cheese. It has creamy and rich flavors with sweet overtones, and distinctive "eyes" throughout the body.
