A flagship cheese produced by Bleating Heart in Tomales, California, using raw sheep milk. A hand crafted cheese is aged for 3 to 4 months. During aging it is hand-rubbed with salt water at certain times, that gives an orange-straw coloured rind. It has firm ivory colour paste, slightly salty taste with subtle nutty and buttery flavour. It goes well with Petit Syrah, Pinot Noir.
