Edmund Tew is a raw milk soft cow's cheese. The rind is washed during maturation giving some nutty, farmy, funky flavours to the outside while the core retains its lactic milky acidity.

Nice fresh middle, the creamy bit around the rind was really strong and mature! Love the appearance Second time round the cream was less strong, much nicer balance
