This cheese is made from unpasteurised sheep's milk and was introduced by Giovanni Irranca on his farm. It has a characteristic almond aroma with a creamy texture. The rind is brine washed and takes three months to mature. A smoked version of this cheese is also available. It is a table cheese and is also used for grating. It is best paired with Barolo wine.
