Casatica is a full-fat pasteurized buffalo milk cheese made by Quattro Portoni in Bergamo, Italy. It is a semi-soft cheese with an attractive flowery/bloomy rind and a pristine white, soft paste. Flavours are delicate and creamy, evocative of the richness of buffalo's milk.

Buttery and fatty, not pungent like Quadrello. Planing ribbons and drizzling honey is a simple but elegant way to eat it.

Flavors of mushrooms and earth. Creamy and easy to eat. Good rind to balance the mellowness.
