This cheese was a little underwhelming. Certainly one of the youngest sheep’s milk cheeses I’ve had, this variety lacks the sharp tang that is often present. The rosemary does add a pleasant piney savoriness as you would expect, but that really is the dominating characteristic. The cheese itself is really quite mild and fairly sweet. With all of that said, this would make a great entry cheese into sheep’s milk varieties if someone was put off by the usual sour and occasionally barnyardy flavors that you often find with older sheep’s milk cheeses.
