Boo Boo Baby Swiss, initially known only as a "boo boo," is a raw cow's milk cheese produced by Jennifer Hines and Pete Schropp at Rockhill Creamery in Richmond, Utah. It is a variation of Wasatch Mountain Gruyère, an aged cave cheese with crumbly, firm paste and small open "eyes" holes that have become an identifier of the cheese.Boo Boo is a sweet, nutty cheese that tastes delicious with a nice smoky ham or atop a grilled cheese sandwich.
