Bohemian Blue is a caved-aged cheese made by Hidden Springs Farm, Wisconsin, US. This pasteurized goat's milk blue cheese is dry and crumbly in texture. Aged for 4 to 6 weeks, it has a sweet and slightly sour taste. It is best eaten with honey. It pairs well with malt scotch or sweet wine.
